Guests love the simple pleasure of sitting together at the long outdoor table after an action-packed game drive and perhaps a few cooling laps in the infinity pool. The menu is always fresh and flavourful, with generous platters of wholesome food served family-style for everyone to enjoy. It’s easy to make and delicious to eat – just serve with a leafy salad and some crunchy bread for the ideal midday meal. </p>

<h3>Recipe: Tomato & Onion Tart</h3>
<p><strong>Ingredients – what you will need:</strong><br />
400g cooled, blind-baked puff pastry shell<br />
4 ripe tomatoes<br />
1 small bunch fresh basil<br />
½ clove of garlic, chopped finely<br />
Salt and pepper<br />
Olive oil<br />
2 small/medium red onions (or good shop-bought caramelized onion)<br />
150ml basil pesto</p>
<p><strong>Method – what to do:</strong><br />
1. Slice the tomato in thirds, width ways across<br />
2. Place them on a baking tray and sprinkle with the chopped basil (keep a few leaves back for a garnish), garlic, salt and pepper<br />
3. Drizzle with olive oil and roast in an 180˚C oven until the tomatoes turn slightly in colour (about 15 minutes depending on the type of oven used). Do not over bake the tomatoes as they still need to be nice and firm when used in the tart<br />
4. Cut the onions into wedges (eight per onion) and place on a separate baking tray with some salt, pepper and a little bit of olive oil.<br />
5. Place in the oven to roast until soft and the tips are nicely caramelized<br />
6. Once the vegetables are cooked, remove from the oven and set aside to cool slightly<br />
7. Spreading some basil pesto over the cooled puff pastry shell(s)<br />
8. Place the roasted tomato and onion on top and put back into the oven at 180˚C for about 10 minutes to warm through<br />
9. Remove the tart from the oven, place on a suitable serving plate and garnish with some torn basil and a drizzle of olive oil</p>

<p>Tomatoes absolutely flourish in the warm climate at <a href="http://singita.com/region/singita-kruger-national-park/" target="_blank">Singita Kruger National Park</a>, and their plump, juicy flesh provides flavour for all manner of different dishes for breakfast, lunch and dinner. This versatile ingredient is used in soups, salads, salsas, sauces and sandwiches; fresh, roasted, grilled, fried, pureed and stuffed, the options are endless!</p>

<h2>Tomato Jam Recipe</h2>
<p>We use this homemade tomato jam for lots of things at <a href="http://singita.com/lodge/sweni-lodge/" target="_blank">Singita Sweni Lodge</a>, not least of all as the base for a dish with potato gnocchi, parmesan chips, asparagus and avocado puree:</p>
<h3>Ingredients – what you will need:</h3>
<p>500g ripe plum tomatoes<br />
2 red onions, finely chopped<br />
2 cloves of garlic, finely chopped<br />
5 sprigs of thyme, leaves picked<br />
300g brown sugar<br />
200ml white wine vinegar<br />
1 tablespoon olive oil</p>
<h3>Method – what to do:</h3>
<p>1. Take your tomatoes and remove the eye (where the fruit comes from the plant) and make an “x” on top of the tomatoes using a sharp knife. You do not want to cut deep into the tomato, you just want to break the skin.<br />
2. Next, place all the tomatoes into a pot of boiling water for 30 seconds. Remove the tomatoes from the pot and place directly into a large bowl of iced water and allow to cool completely.<br />
3. Remove the skin from the tomatoes and roughly chop the peeled tomatoes.<br />
4. Add the olive oil to a medium size pot followed by the onions, garlic and thyme.<br />
5. Sweat the onions, garlic and thyme over a gentle heat for 5 minutes.<br />
6. Next add your tomatoes, brown sugar and vinegar and reduce the heat to a simmer.<br />
7. Cook all of the ingredients for ± 90 minutes, stirring frequently.<br />
8. The tomatoes should have turned slightly translucent by now and have a glossy appearance.<br />
9. Break up roughly with a spoon or purée in a blender, depending on your preferred texture, and then allow to cool. Store in an airtight container.</p>

<p>Betacyanin, the magenta pigment that gives beetroot its colour, is a powerful antioxidant and, along with a high concentration of other nutrients, vitamins and minerals, means this ingredient has numerous health benefits. This superfood is grown right here in our kitchen garden, along with lots of other seasonal vegetables and herbs, like basil, radishes and spinach.</p>

<h2>Beetroot Tart Recipe</h2>
<p>At <a href="http://singita.com/lodge/sweni-lodge/" target="_blank">Singita Sweni Lodge</a>, this dish is served with citrus goat’s cheese, toasted pistachios, a handful of rocket, and a pink peppercorn and honey dressing:</p>
<h3>Ingredients – what you will need:</h3>
<p>250g cooked whole beetroot, boiled and peeled<br />
50ml red wine vinegar<br />
2 tablespoons treacle sugar<br />
The juice of 1 orange<br />
1 sheet of puff pastry<br />
1 sprig of rosemary<br />
1 egg, whisked</p>
<h3>Method – what to do:</h3>
<p>1. Place the vinegar, orange juice, sugar and rosemary into a small pan and simmer over a very low heat for roughly 5 minutes or until you have a syrupy consistency. Allow to cool.<br />
2. Scoop out 8 “balls” of cooked beetroot using a melon baller and place them into the vinegar and orange juice mixture. Coat the beetroot evenly with the syrup.<br />
3. Place your puff pastry on a floured work surface. Using a round template (e.g. a tea cup, saucer or side plate) cut out a round piece of puff pastry. Remember the size of your template will determine the size of your tart!<br />
4. Next brush the round of puff pastry with the egg wash and place on a greased baking tray.<br />
5. Place your beetroot balls on top of the puff pastry, arranging them in a symmetrical pattern. Keep any left over vinegar and orange mix for plating.<br />
6. Place the tray in a preheated oven at 180°C for ± 10 – 12 min or until the puff pastry is golden brown.<br />
7. Remove from oven and allow to cool on a wire rack.</p>

6 tablespoons gin<br />
Juice and zest of 2 limes</p>
<p><strong>Method – what to do:</strong><br />
1. Dissolve the sugar and water in a pan over a moderate heat, stirring constantly.<br />
2. Add lime juice and zest and boil for 5 minutes or until the mixture reaches 110°C (225°F).<br />
3. Leave to cool then strain.<br />
4. Stir tonic water and gin into the lime mixture, then pour into a freezer-proof dish and freeze until slushy.<br />
5. Beat the mixture to break up the ice crystals, then freeze again.<br />
6. Repeat the process once more and then freeze until set.<br />
7. To serve, remove from the freezer 10 minutes beforehand and decorate with slices of lime and sprigs of mint in sundae glasses.</p>
<p>Serves approximately 6-8 people.</p>

<p>There is something naturally festive about <a href="http://singita.com/boulders-lodge/" target="_blank">Singita Boulders Lodge</a>; the rich, earth-toned colour palette punctuated by gleaming copper might remind you of a Christmas decoration or a plate piled with gold-topped mince pies. The recently refurbished lodge is set along the banks of the Sand River in Singita’s privately owned reserve within the <a href="http://singita.com/regions/singita-sabi-sand/" target="_blank">Sabi Sand Reserve</a>, and an inviting oasis, especially at this time of year.</p>

<p>It’s the perfect location for a festive celebration; in fact preparations for Christmas are already well underway. The hard-working kitchen teams are in full swing, creating all manner of sweet and spicy treats for our holiday guests. Sous Chef Nico Meyer’s mince pies are one such example; a mouthwatering mixture of tender pastry and juicy fruit filling that flies off the long bar at tea time. He was kind enough to share his recipe with us and give us a look behind the scenes at the lodge’s festive season preparations:</p>

<p style="text-align: center;"><strong>FESTIVE & FRUITY MINCE PIE RECIPE</strong></p>
<p><strong>TO MAKE THE FRUIT MINCE: </strong></p>
<p><strong>Ingredients – what you will need:</strong><br />
90g dried prunes, stoned<br />
90g dried dates, stoned<br />
80g sultanas<br />
70g seedless raisins<br />
40g chopped almonds<br />
30g chopped walnuts<br />
80g light brown muscovado sugar<br />
Finely grated zest of ½ lemon<br />
Finely grated zest of ½ orange<br />
Pinch each of cinnamon, clove and ginger<br />
2 tablespoons port</p>
<p><strong>Method – what to do:</strong><br />
Combine all your ingredients in a bowl and cover<br />
Leave overnight in your fridge to soak</p>
<p><strong>TO MAKE THE PASTRY:</strong></p>
<p><strong>Ingredients – what you will need:</strong><br />
200g butter<br />
200g icing/powdered sugar<br />
3 eggs<br />
500g cake flour</p>
<p><strong>Method – what to do:</strong><br />
Cream the butter and sugar together<br />
Add the eggs one at a time, mixing well after each addition<br />
Add your flour until combined<br />
Tip out onto a lightly floured surface and fold until the pastry comes together, be careful not to over mix<br />
Wrap the pastry in cling film and rest for 30 mins in the fridge</p>
<p><strong>TO MAKE THE MINCE PIES:</strong></p>
<p>Heat your oven to 220°C<br />
Roll out the pastry to 3mm thick and Use a round cutter (about 10cm) to cut out your bases<br />
Place them into muffin or cupcake trays<br />
Put a small dollop (about 1½ teaspoons) of fruit mince into each<br />
Brush the edge of each pie with a little beaten egg<br />
Re-roll out the pastry to cut lids and press them on top to seal<br />
Bake until golden brown (10-20 minutes, depending on your oven)<br />
Dust with icing sugar</p>

Today we are sharing two recipes from the lunch table that are ideally eaten in the shade of a poolside umbrella or beneath a leafy acacia.</p>

<p><strong>SINGITA SABORA TENTED CAMP</strong><br />
Steeped in character, Singita Sabora Tented Camp is an intimate 1920s-style explorer’s camp, permeated by a sense of nostalgic adventure. Guests are served light and refreshing meals around the swimming pool that overlooks the grassy savannah. The menu often includes delicious, crunchy salads made from ingredients grown in the kitchen garden, like this mouthwatering dish made from cured salmon and homegrown veggies:</p>

<p><strong>Broccoli, Fennel and Smoked Salmon Salad</strong><br /><em><strong>with an orange and mustard dressing</strong></em></p>
<p>FOR THE DRESSING</p>
<p>Ingredients – what you will need:<br />
½ cup freshly squeezed orange juice<br />
1 tsp mustard<br />
20g dill chopped<br />
20g coriander chopped<br />
1 tsp cumin ground</p>
<p>Method – what to do:<br />
1. In a small bowl, mix the mustard, orange juice and herbs.<br />
2. Add the oil slowly to the orange juice and whisk continuously. The dressing should thicken up and achieve a syrupy consistency.<br />
3. Chill in the fridge until you are ready to use it.</p>
<p>FOR THE SALAD</p>
<p>Ingredients – what you will need:<br />
200g Smoked salmon<br />
300g Broccoli florets<br />
1 Fennel bulb<br />
50g Toasted almond flakes<br />
50g Microherbs or rocket</p>
<p>Method – what to do:<br />
1. Blanch the broccoli florets by placing them in boiling water for one minute and then quickly chilling them in an ice-cold bowl of water. Set aside<br />
2. Slice thin shavings of fennel with a mandolin or small, sharp knife<br />
3. Remove the broccoli from the ice bath and pat dry<br />
4. Add the vegetables to a bowl with the smoked salmon. Try arranging the salmon into “roses” for an extra flourish!<br />
5. Scatter the toasted almond flakes and add microherbs over the top<br />
6. Drizzle with your orange and mustard dressing</p>

<p><strong>Creamy Fire-Roasted Camembert</strong><br /><em><strong>with sweet and sticky tomatoes</strong></em></p>
<p>Ingredients – what you will need:<br />
1 Camembert round<br />
1 punnet of cherry tomatoes<br />
3 rosemary sprigs<br />
barbecue spice<br />
olive oil<br />
balsamic reduction</p>
<p>Method – what to do:<br />
1. Make a lovely wood fire (or use a stove if you don’t happen to have an African grassland nearby!)<br />
2. In a bowl, sprinkle the tomatoes with the barbecue spices and toss together with some olive oil<br />
3. Put your uncovered camembert in the centre of a cast iron pan and arrange the tomatoes around the cheese<br />
4. Place your sprigs of rosemary between the tomatoes and the cheese<br />
5. Place the pan onto some of the amber coals and allow to heat up, until the camembert just starts breaking through the skin<br />
6. Drizzle balsamic vinegar over the whole dish and serve warm with freshly baked rosemary bread</p>
